Notes

  • The batter should be very thick and scoopable—thicker than regular pancake batter.
  • Do not press the pancakes after flipping; this will deflate the air pockets.
  • If the batter spreads too much, add 1 tbsp of flour. If they brown too fast, lower the heat.
