Homemade Meatballs

  • Extra lean ground beef 2 pounds
  • Large eggs 2
  • Parmesan cheese (freshly grated) 1/2 cup
  • Salt 1.5 teaspoons
  • Onion (very finely diced) 1/2
  • All-purpose flour (or 1/2 cup bread crumbs) 1/4 cup
  • Italian seasoning 1 teaspoon

Sandwich Assembly

  • Hoagie rolls (sourdough rolls preferred) 6
  • Pasta sauce (marinara) 25 ounces
  • Mozzarella cheese (shredded) 1.5 cups
  • Olive oil (for toasting) as needed

The Meatballs

In a large bowl, combine ground beef, eggs, parmesan, salt, diced onion, Italian seasoning, and flour. Mix well with your hands.

Roll mixture into 1" balls and place on a parchment-lined baking sheet.

Bake at 350°F for 20 minutes until browned and internal temperature is 165°F.

Sauce & Simmer

Add pasta sauce to meatballs in a cast iron skillet and simmer for 10 minutes.

Assemble & Broil

Cut hoagies in half, brush with olive oil, and toast cut-side down in a hot skillet for 1 minute.

Place hoagies on a baking sheet. Fill with saucy meatballs and top with mozzarella cheese.

Broil for 2 minutes (top bun off) until cheese is melted. Replace top bun and serve.

Baker's Notes

  • Starting with wet hands helps prevent meatball mixture from sticking.
  • Watch carefully while broiling to prevent burning.
