Loaded Potato Soup

Creamy and hearty soup with starchy potatoes, fresh onion and garlic, cheddar cheese, and crispy bacon bits.

Soup Base

  • Russet potatoes (peeled and cubed) 3 pounds
  • Bacon (diced) 10 ounces
  • Onion (diced) 1
  • Garlic cloves (minced) 2
  • Butter 4 tablespoons
  • All-purpose flour 1/4 cup
  • Chicken broth 5 cups

Finishers & Toppings

  • Heavy cream 1/2 cup
  • Cheddar cheese (shredded, plus more to top) 1 cup
  • Sour cream 1/2 cup
  • Salt 1.5 teaspoons
  • Black pepper 1/4 teaspoon
  • Green onions (sliced, for garnish)

Loaded Potato Soup

Prep Potatoes & Bacon

Add cubed potatoes to a large pot, cover with cold water, and bring to a boil. Cook 15-20 minutes until fork-tender. Drain.

In another pot, cook diced bacon until crispy. Remove and drain on paper towels, reserving 2 tbsp fat in the pot.

Sauté & Thicken

Sauté diced onion in bacon fat for 4-5 minutes, then add garlic for 1 minute.

Add butter and stir until melted, then whisk in flour. Cook for 2-3 minutes, stirring frequently.

Whisk in chicken broth and bring to a simmer until slightly thickened.

Blend & Simmer

Blend 2 cups of cooked potatoes with 2 cups of broth until smooth. Pour back into the pot with remaining potato cubes.

Add heavy cream, shredded cheese, sour cream, salt, pepper, and half of the bacon. Simmer for 10 minutes.

Ladle into bowls and garnish with remaining bacon, more cheese, and green onions.

Baker's Notes

  • Use homemade bone broth for extra nutrition.
  • Don't over-blend the potatoes or they might become gummy.
